Description

These marinated olives are a study in contrast, combining the briny punch of green and black olives with the bright acidity of lemon and the warmth of toasted coriander. The addition of fresh garlic, dried mint, and red chili creates a complex flavor profile that is both savory and slightly spicy. Perfect for serving alongside grilled meats, mixed into salads, or enjoyed as a sophisticated appetizer with crusty bread, these olives improve with time. The olive oil infusion captures the essence of the herbs and spices, turning the liquid into a delicious dressing. Make them ahead of time to allow the flavors to meld, and watch them become a crowd-pleasing staple in your pantry.

Ingredients

Directions

  1. Place the green olives in a clean, dry preserving jar or screw-top jar.
  2. Add the lemon slices to the jar with the green olives.
  3. Add the coriander seeds, dried mint, and half of the crushed garlic to the green olive jar.
  4. Pour olive oil over the ingredients until they are completely submerged, then seal the jar tightly.
  5. In a second clean jar, place the black olives.
  6. Add the red bell pepper strips, red chile rings, thyme sprig, and the remaining crushed garlic to the black olive jar.
  7. Pour olive oil over the black olive mixture until fully covered, then seal the jar tightly.
  8. Store the jars at room temperature or in the refrigerator for at least 2 days before serving to allow the flavors to meld.
