Description

Masfouf is a beloved Tunisian sweet dish, often served during Ramadan or as a comforting dessert. This recipe features fine semolina that is twice-steamed to achieve a fluffy, distinct texture. It is enriched with melted butter and sweetened with sugar, then tossed with plump raisins, toasted almonds, and pine nuts. The result is a dish that balances nutty richness with a delicate sweetness. It is best served at room temperature, allowing the flavors to meld. Perfect for sharing with family or guests, this snack offers a glimpse into North African culinary traditions with its simple yet elegant preparation.

Ingredients

Directions

  1. Mix the semolina and hot water in a bowl until combined.
  2. Place the semolina mixture into a couscous steamer basket or a heatproof bowl placed over a pot of simmering water.
  3. Cover and steam for 10 minutes.
  4. Remove the steamer and transfer the semolina to a large bowl.

Note

Masfouf is traditionally served during Ramadan to break the fast, but it makes an excellent dessert or sweet snack any time of year.

If you do not have a couscous steamer, you can use a colander placed over a pot of boiling water, ensuring the colander does not touch the water. Alternatively, place the semolina in a heatproof bowl set inside a larger pot of simmering water, covering the bowl with foil to trap the steam.

Toasting the almonds and pine nuts before adding them enhances their flavor and crunch.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently or serve cold.
