Description

This comforting dish elevates classic mashed potatoes by combining them with deeply caramelized onions and cabbage. The potatoes are steamed until tender, then whipped with butter and half-and-half for a luxuriously smooth texture. The topping features thinly sliced onions and cabbage slowly cooked in butter until they achieve a deep brown color and sweet, savory flavor. A splash of red wine vinegar and broth adds a bright acidity that cuts through the richness. Served in a casserole and baked until hot, this side dish offers a perfect balance of creamy potatoes and complex, aromatic vegetable topping. It is an ideal accompaniment to roasted meats or hearty stews, bringing a home-style warmth and sophisticated flavor profile to the table.

Ingredients

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Place the peeled and cut potatoes in a steamer basket over boiling water. Cover and steam until tender when pierced with a fork, about 20 minutes.
  3. While the potatoes are steaming, melt 4 tablespoons of butter in a large heavy skillet over medium heat.
  4. Add the thinly sliced onions, cabbage, and a large pinch of salt to the skillet.
  5. Cook the vegetables, stirring frequently and scraping the bottom of the pan to prevent burning, until they are deep brown and caramelized, about 40 minutes.
  6. Season the caramelized vegetable mixture with salt and pepper to taste. Remove from heat.
  7. Transfer the steamed potatoes to a large bowl.
  8. Add the remaining 4 tablespoons of butter and the half-and-half to the potatoes.
  9. Mash the potatoes until smooth and creamy.
  10. Season the mashed potatoes with salt and pepper to taste.
  11. Reserve about 1 cup of the caramelized onion and cabbage mixture. Mix this reserved cup into the mashed potatoes.
  12. Mound the potato mixture into a shallow casserole dish.
  13. Return the skillet with the remaining onion and cabbage mixture to high heat.
  14. Add the red wine vinegar and chicken broth (or water) to the skillet.
  15. Stir over high heat until the liquid is almost completely evaporated, about 1 minute.
  16. Spoon the hot onion and cabbage mixture evenly over the mashed potatoes in the casserole.
  17. Bake in the preheated oven until the dish is very hot and bubbly, about 20 minutes.

Note

For best results, choose onions that are sweet, such as Vidalia or Walla Walla, to enhance the caramelization.

The cabbage adds a slight crunch and earthy flavor; ensure it is thinly sliced so it cooks down evenly with the onions.

If you prefer a vegan version, substitute the butter with olive oil or vegan butter and use vegetable broth instead of chicken broth.

The dish can be assembled ahead of time and refrigerated before baking; add 5-10 minutes to the baking time if cooking from cold.

Adjust the amount of reserved onion mixture mixed into the potatoes based on your preference for texture and flavor intensity.
