Ingredients

Directions

  1. Cube the stewing steak and kidney, and chop the onion finely.
  2. Place the meat, kidney, onion, bay leaf, salt, and pepper into a large saucepan.
  3. Cover with water and bring to a boil, then reduce heat and simmer covered for 2 to 2.5 hours until the meat is very tender.
  4. While the meat cooks, peel the potatoes and cut them into 1-inch cubes.
  5. Place the potatoes in a saucepan and add enough reserved meat stock and water to cover them.
  6. Bring to a boil and cook for 5 minutes until just tender.
  7. Drain the potatoes and reserve the cooking liquid for gravy.
  8. Preheat the oven to 375ðF (190ðC) or Gas Mark 5.
  9. In a deep pie dish, layer the cooked meat mixture followed by the potato cubes.
  10. Pour a little of the reserved stock over the filling to moisten.
  11. Roll out the shortcrust pastry on a floured surface to fit the pie dish, leaving a slight overhang.
  12. Cut a 1-inch strip from the edge of the pastry and press it around the rim of the pie dish.
  13. Place the main pastry lid over the filling and crimp the edges firmly to seal.
  14. Trim any excess pastry and cut a small steam vent in the center of the lid.
  15. Bake for 30 to 35 minutes until the pastry is golden brown and crisp.
  16. Meanwhile, thicken the remaining reserved stock with cornflour to make a gravy and serve separately.
