Meatballs With Sauce
Description
These Southern-style meatballs are a comforting twist on a classic, featuring a savory blend of ground beef, pork, and sirloin. The secret lies in the center: a cube of sharp Cheddar cheese that melts into a gooey, flavorful core. The meat mixture is seasoned with onion, garlic, and a kick of cayenne pepper, then rolled in flour for a perfect sear. Simmered in a homemade tomato sauce thickened with a roux and finished with white wine, these meatballs offer a hearty, satisfying meal. They are excellent served over spaghetti, rice, or with crusty bread to soak up the rich, spicy gravy. Ideal for family dinners or potlucks.Ingredients
Directions
-
Grind the sirloin steak and mix it thoroughly with the 2 pounds of ground meat.
-
Chop the Cheddar cheese into 1/4-inch cubes and set aside.
-
In a large bowl, combine the ground meat mixture, onion powder, garlic powder, cayenne pepper, and beaten eggs.
-
Mix until just combined, then roll the mixture into 2-1/2 inch balls.
-
Using a spoon handle, make a small hole in the center of each meatball, insert a cube of cheese, and carefully pinch the meat closed to seal.
-
Roll the stuffed meatballs lightly in flour.
-
Heat cooking oil in a large skillet or Dutch oven over medium-high heat and brown the meatballs on all sides. Remove and set aside.
-
In the same pot, melt 2 teaspoons of flour with a little more oil to create a roux.
-
Add finely chopped onions and green peppers to the roux and saut&# 195;© until softened.
-
Stir in the tomato sauce and one cup of water, scraping up any browned bits from the bottom of the pot.
-
Return the meatballs to the pot and bring to a simmer. Cover and cook for 10 minutes.
-
Uncover and continue simmering until the gravy thickens to your desired consistency.
-
Stir in the white wine and let simmer for another 2-3 minutes.
