Description

This vibrant dish marries tender, thinly sliced beef with the bright acidity of red wine vinegar and the earthiness of garlic. The beef is quickly stir-fried to keep it juicy, then combined with a mix of fresh mushrooms and frozen vegetables for a colorful, nutrient-rich medley. Served over buttery linguine and finished with a sprinkle of Parmesan, it offers a perfect balance of savory, tangy, and umami flavors. It’s an excellent choice for a quick weeknight dinner that feels special yet remains simple to prepare. The combination of textures—from the soft pasta to the crisp-tender veggies—makes every bite satisfying and hearty.

Ingredients

Directions

  1. Partially freeze the beef to make slicing easier, then thinly slice it across the grain into bite-size strips.
  2. In a medium bowl, combine the water, red wine vinegar, minced dried onion, pepper, and ground red pepper to create the marinade.
  3. Add the sliced beef to the marinade, mixing well to coat, and let it marinate at room temperature for 15 minutes.
  4. Meanwhile, cook the linguine according to package directions until al dente. Drain and toss with butter to prevent sticking; keep warm.
  5. Drain the beef from the marinade, reserving the liquid in a separate bowl. Stir the cornstarch into the reserved marinade until smooth and set aside.
  6. Heat 2 tablespoons of oil in a large skillet or wok over medium-high heat. Add the minced garlic and stir-fry for 30 seconds until fragrant.
  7. Add the marinated beef to the skillet and stir-fry for about 3 minutes until browned and cooked through. Remove the beef from the skillet and set aside.
  8. Add the remaining 1 tablespoon of oil to the skillet. Add the frozen vegetable pack and stir-fry for 4 minutes until heated through.
  9. Give the cornstarch-marinade mixture a final stir and pour it into the skillet with the vegetables.
  10. Return the beef to the skillet. Cook and stir constantly until the sauce bubbles and thickens, about 2 minutes.
  11. Arrange the buttered linguine on a serving platter and top with the beef and vegetable mixture.
  12. Sprinkle with grated Parmesan cheese before serving.
