Description

This vibrant salad is the perfect light lunch or starter for warm weather. The combination of sweet, ripe melon and tart strawberries creates a delightful fruit base, balanced by the savory richness of cooked prawns. Creamy avocado adds a luxurious texture, while a quick strawberry-orange dressing ties the flavors together with a hint of citrus and sweetness. It&# 226;€™s fresh, colorful, and incredibly easy to assemble. Serve it on a bed of crisp lettuce for a complete meal that feels both indulgent and healthy. Ideal for summer gatherings or a quick weeknight dinner.

Ingredients

Directions

  1. Peel the avocado and chop it into bite-sized pieces, placing them in a mixing bowl.
  2. Sprinkle the chopped avocado with lemon juice to prevent browning and toss gently.
  3. Halve the melon, remove the seeds, and scoop out the flesh using a melon baller or knife to create cubes.
  4. Hull and slice the strawberries, then chop the celery heart into small pieces.
  5. Gently fold the melon cubes, celery, strawberries, and cooked peeled prawns into the bowl with the avocado.
  6. Cover the bowl and refrigerate the mixture while preparing the dressing.
  7. For the dressing, combine whole strawberries, caster sugar, olive oil, orange juice, and chopped parsley in a food processor.
  8. Puree the dressing ingredients until smooth, then season with salt and freshly ground black pepper to taste.
  9. Rinse and tear the Little Gem lettuces into bite-sized pieces and arrange them on four plates.
  10. Divide the chilled prawn and fruit mixture evenly over the lettuce beds.
  11. Spoon the strawberry dressing over the salads and serve immediately.
