Ingredients

Directions

  1. Heat the salad oil in a large skillet over medium-high heat.
  2. Add the quartered frankfurters to the skillet and sauté until browned on all sides.
  3. Remove the browned frankfurters with a slotted spoon and set aside on a serving platter.
  4. In the same skillet drippings, add the chopped onion and crushed garlic; sauté for about 2 minutes until fragrant.
  5. Stir in the whole tomatoes with their liquid, pinto beans with their liquid, chunky salsa, uncooked rice, chili powder, and 1/2 cup of water.
  6. Bring the mixture to a boil, then reduce heat to low, cover the skillet, and simmer for 15 minutes, or until the rice is tender and liquid is absorbed.
  7. Spoon the rice and bean mixture onto the platter next to the frankfurters.
  8. Sprinkle the shredded Monterey Jack cheese with jalapeno peppers over the hot rice mixture so it melts slightly.
  9. Garnish with fresh cilantro leaves and serve immediately.
