Description

This Mighty Hero is a show-stopping centerpiece perfect for potlucks, game day gatherings, or a relaxed weekend lunch. By hollowing out a crusty sourdough loaf, you create a sturdy vessel for layers of lean turkey, melty part-skim mozzarella, and fresh vegetables. The secret lies in the quick balsamic-olive oil marinade, which infuses the sliced mushrooms, tomatoes, and onions with bright, tangy flavor while keeping them crisp. Shredded zucchini adds a subtle texture and freshness that balances the richness of the cheese. It’s a satisfying, protein-packed meal that feels indulgent yet relies on simple, wholesome ingredients. Serve it chilled for a refreshing picnic option or at room temperature for maximum flavor impact.

Ingredients

Directions

  1. Using a serrated bread knife, carefully slice the sourdough loaf in half horizontally, creating a top and bottom lid.
  2. Gently scoop out the soft interior bread from both halves, leaving a sturdy 1/2-inch thick shell.
  3. In a shallow baking dish, whisk together the balsamic vinegar, olive oil, dried oregano, freeze-dried parsley, pepper, and minced garlic to create the marinade.
  4. Add the sliced mushrooms, tomato slices, and purple onion rings to the dish, tossing gently to coat them evenly in the marinade.
  5. Let the vegetables marinate for 15 to 20 minutes to absorb the flavors.
  6. Using a slotted spoon, remove the vegetables from the marinade, allowing excess liquid to drip off. Reserve the remaining marinade in the dish.
  7. Brush the reserved marinade generously over the inside surfaces of both bread shells.
  8. Place the bottom bread shell on a cutting board or serving platter. Spread 1 cup of shredded zucchini evenly over the bottom.
  9. Layer half of the marinated mushroom, tomato, and onion mixture over the zucchini.
  10. Arrange 4 slices of lean turkey over the vegetables, followed by 3 slices of mozzarella cheese.
  11. Repeat the layering with the remaining zucchini, marinated vegetables, turkey slices, and mozzarella cheese.
  12. Place the top half of the bread loaf over the filling, pressing down gently to secure the contents.
  13. Wrap the entire loaf tightly in aluminum foil. Refrigerate for at least 30 minutes to allow flavors to meld and the sandwich to set.
  14. When ready to serve, unwrap the loaf and slice into thick wedges using a serrated knife.
