Ingredients

Directions

  1. Preheat the oven to 350&# 194;°F (180ðC). Line two baking sheets with parchment paper or silicone mats.
  2. Finely chop the hazelnuts, glace cherries, and lemon peel. Set aside.
  3. In a small saucepan, melt the butter over medium heat.
  4. Add the caster sugar to the melted butter and bring to a boil, stirring constantly.
  5. Boil for about 2-3 minutes until the mixture turns a light golden amber color.
  6. Remove from heat and immediately stir in the chopped cherries, hazelnuts, lemon peel, and lemon juice.
  7. Let the mixture cool for 1-2 minutes until it is thick but still pourable.
  8. Drop small teaspoon-sized heaps of the mixture onto the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.
  9. Bake for 5-6 minutes, or until the edges are golden brown and the centers look set.
  10. Remove from the oven and immediately use a knife or spatula to neaten the edges if they have spread too much.
  11. Allow the florentines to cool completely on the baking sheets. They will crisp up as they cool.
  12. Melt the chocolate (half plain, half white) in separate bowls set over simmering water or in short bursts in the microwave.
  13. Dip the flat side of each cooled florentine into the melted chocolate, coating the bottom evenly.
  14. Place the chocolate-coated florentines back on the parchment paper to set.
  15. Before the chocolate hardens, drag a fork gently through the chocolate to create a decorative wavy pattern.
  16. Let the chocolate set completely at room temperature or in the refrigerator for 10 minutes before serving.
