  2. Snap off the ends and remove strings from the pea pods.

  4. Immediately rinse the pea pods under cold water and drain again.
  5. Slice the mushrooms into 1/4-inch thick pieces.
  6. Cut the green onions into 2-inch pieces.
  7. Mix cornstarch with 2 tablespoons of cold water until dissolved and set aside.
  8. Heat a wok until a drop of water bubbles and skitters when sprinkled in.
  9. Add oil and rotate the wok to coat the sides.

  11. Add mushrooms and bamboo shoots; stir-fry for 1 minute.
