Ingredients

Directions

  1. Dissolve powdered instant coffee in 1/4 cup plus 1 tablespoon of hot water.
  2. Place the milk chocolate and the dissolved coffee mixture into a medium-sized heatproof bowl.
  3. Bring 1 inch of water to a simmer in a wide skillet.
  4. Turn off the heat and wait 30 seconds.
  5. Set the bowl containing the chocolate and coffee over the pan of hot water (bain-marie method).
  6. Stir the chocolate mixture gently until it is completely melted and smooth.
  7. Alternatively, melt the chocolate and coffee mixture in a microwave on LOW (30%) power for about 2.5 minutes, stirring occasionally.
  8. Remove the chocolate mixture from the heat and allow it to cool until it feels slightly cool to the touch (about 85&# 194;°F or 30ðC).
  9. Whip 1/2 cup of heavy cream until soft peaks form, being careful not to over-whip to stiff peaks.
  10. Gently fold the whipped cream into the cooled chocolate mixture until just combined; the mousse should remain very soft.
  11. Immediately scrape the mousse into serving molds, glasses, or onto a plate.
  12. Cover and refrigerate for up to 2 days, or freeze for up to 2 months.
