Description

This vibrant Molded Vegetable Surprise combines the zesty brightness of lime gelatin with the tart sweetness of cranberry juice, creating a refreshing, multi-layered appetizer. Freshly sliced cucumbers and shredded green cabbage are suspended within the translucent layers, adding crisp texture and a pop of color. Its a visually striking dish that balances sweet and tangy flavors, perfect for summer gatherings or as a light starter before a heavier meal. The combination of lime and cranberry offers a unique twist on traditional gelatin molds, making it a memorable addition to your party repertoire.

Ingredients

Directions

  1. Place lime gelatin and 3/4 cup water in a 1-quart heat-resistant non-metallic measuring cup.
  2. Heat uncovered in microwave 2 minutes or until mixture boils, stirring once halfway through.
  3. Add ice cubes to the hot lime mixture until the liquid level reaches 2 cups.
  4. Stir until most ice cubes are melted and the mixture reaches the consistency of unbeaten egg whites (approximately 1 1/2 cups). Add water if necessary to reach this measurement.
  5. Pour the lime gelatin mixture into a 3-cup mold.
  6. Arrange thinly sliced cucumbers evenly within the lime gelatin layer.
  7. Chill in the refrigerator until the lime layer is almost set but not completely firm.
  8. Soften unflavored gelatine in 1/2 cup water by letting it sit for 5 minutes.
  9. Place 3/4 cup water and frozen cranberry juice into a 1-quart heat-resistant non-metallic measuring cup.
  10. Heat uncovered in microwave for 1 minute or until the frozen juice is completely melted.
  11. Stir the softened unflavored gelatine mixture, 1/2 teaspoon salt, and 1 cup shredded cabbage into the hot cranberry mixture until fully dissolved and combined.
  12. Chill the cranberry mixture in the refrigerator until it reaches the consistency of unbeaten egg whites.
  13. Carefully pour the cranberry mixture over the partially set lime and cucumber layer in the mold.
  14. Chill in the refrigerator for 3 hours or overnight until completely set.
  15. To serve, run a knife around the edge of the mold, invert onto a serving plate, and slice.

Note

Ensure the lime layer is only "almost set" before adding the cucumber slices so they adhere properly, but firm enough to hold their position.

The unflavored gelatine must be fully dissolved in the hot cranberry mixture before chilling; otherwise, lumps may form.

For easier unmolding, dip the bottom of the mold in warm water for 5-10 seconds before inverting.

This recipe can be made up to 24 hours in advance. Store covered in the refrigerator.

Substitute red cabbage for green cabbage for a deeper color contrast.
