Directions
-
Sprinkle yeast into 3 cups of warm water mixed with 1 tablespoon of sugar. Mix well and let sit for 10 minutes until foamy.
-
Add 3 cups of flour to the yeast mixture and beat well with a beater or mixer until combined.
-
Let the sponge mixture rise until spongy, approximately 30 minutes.
-
Beat 3 eggs vigorously for 5 minutes until they are frothy and fluffy.
-
Soften 3/4 cup of margarine and add 1 cup of sugar. Beat really well until the mixture is very creamy.
-
Add the creamy margarine mixture to the beaten eggs and beat until well blended. Add salt and mix.
-
Add the egg and margarine mixture to the risen sponge mixture.
-
Add approximately 4 to 5 cups of flour and beat with a beater really well until smooth.
-
Continue adding the remaining flour until the dough is smooth enough to handle.
-
Turn the dough out onto a floured board and knead until it is no longer sticky and easy to handle. You do not need to knead in all the flour if the dough becomes too stiff.
-
Place the dough in a bowl, cover with a damp cloth, and let rise in a warm place until doubled in size, about 1 hour.
-
Grease 2 large rectangular baking pans with margarine. Sprinkle liberally with brown sugar (about 1/4 inch deep) and dot with soft butter (1 stick per pan).
-
Sprinkle the pans very lightly with water to help prevent the sugar from burning and sticking.
-
Punch down the risen dough and let it rest for 30 minutes.
-
Turn out the dough and divide it in half. Roll one half into a rectangle approximately 1/2 inch thick.
-
Spread soft butter over the entire surface of the rectangle and sprinkle with a mixture of sugar and cinnamon.
-
Roll up the dough jelly-roll style, stretching gently as you roll to create layers.
-
Cut the roll into 1-inch thick slices.
-
Place the slices in the prepared pans, allowing them to just touch but not crowd. Cover with a damp cloth and let rise until the rolls are above the level of the pans.
-
Bake at 325-350F (177C) for 20-25 minutes until golden brown.
