Description

This Monastery Oatmeal Bread is a comforting, rustic loaf that captures the essence of traditional hearth baking. The combination of whole wheat flour, rolled oats, and a touch of honey or sugar creates a deeply satisfying flavor profile with a beautiful golden-brown crust. The texture is uniquely chewy yet tender, making it perfect for slicing thick and toasting with butter or jam. It pairs wonderfully with soups, stews, or simply as a standalone snack. This bread is easy to make with pantry staples and offers a wholesome, homemade quality that brings warmth to any meal. Enjoy it fresh from the oven for the best flavor and aroma.

Ingredients

Directions

  1. In a large bowl, combine warm milk, sugar or honey, and yeast. Let stand for 5-10 minutes until foamy.
  2. Add the first cup of rolled oats, bread flour, 1/2 cup whole wheat flour, melted butter, salt, and about 1 cup of additional flour to the yeast mixture. Beat with an electric mixer on low speed for 2 minutes.
  3. Stir in as much additional flour as you can with a wooden spoon. Turn the dough out onto a lightly floured surface.
  4. Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (about 3-5 minutes).
  5. Place dough in a large greased bowl, turning once to grease the top. Cover with plastic wrap and let rise in a warm place until doubled in size, about 1 hour.
  6. Punch dough down. Turn out onto a lightly floured surface and divide in half. Shape each portion into a loaf.
  7. Place loaves in two greased 9x5-inch loaf pans. Cover and let rise until doubled in size, about 45 minutes.
  8. Preheat oven to 375F (190C).
  9. Beat egg with 2 tablespoons milk. Brush over loaves and sprinkle with remaining rolled oats.
  10. Bake for 30-35 minutes or until bread sounds hollow when tapped. Remove from pans immediately; cool on wire racks.
