Description

This hearty brown bread offers a rustic, wholesome experience with its deep whole wheat flavor and subtle sweetness from carob powder. The combination of lukewarm water, shortening, and sesame seeds creates a tender crumb and a satisfyingly crisp crust. Perfect for sandwich lovers or as a side to soups and stews, this loaf brings a comforting, home-baked aroma to your kitchen. Directions

  1. In a large mixing bowl, combine 1 cup of lukewarm water, brown sugar, shortening, salt, carob powder, and sesame seeds. Stir with a spoon or whisk until the mixture is smooth and well-blended.
  2. In a separate small bowl or measuring cup, dissolve the dry yeast in the remaining 1 cup of lukewarm water. Let it stand for 5-10 minutes until it becomes foamy and active.
  3. In another large bowl, mix the whole wheat flour with the instant nonfat milk powder. Create a well in the center of the dry ingredients.
  4. Pour the yeast mixture and the sugar-shortening mixture into the well of the flour mixture. Stir gently to combine until a soft, sticky dough forms.
  5. Turn the dough out onto a lightly floured surface. Knead for 8-10 minutes until the dough is smooth, elastic, and no longer sticky. Add small amounts of flour if necessary, but avoid making it too dry.
  6. Place the kneaded dough in a lightly greased bowl, turning to coat the top. Cover with a damp cloth or plastic wrap. Let it rise in a warm, draft-free place for 1 hour, or until doubled in size.
  7. Preheat your oven to 375°F (190°C). Grease a loaf pan or line a baking sheet with parchment paper.
  8. Punch down the risen dough to release air bubbles. Shape it into a loaf or round ball. Place it on the prepared pan.
  9. Cover the shaped dough loosely and let it rise again for 30-45 minutes, until puffy.
  10. Bake in the preheated oven for 30-35 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  11. Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely before slicing.
