Description

This elegant Poulette Sauce transforms humble chicken broth into a luxurious, velvety accompaniment for delicate morel mushrooms. The sauce is built on a classic roubase of butter and flour, enriched with heavy cream and gently tempered egg yolks to create a silky, custard-like texture. The earthy, honeycomb texture of the morels provides a perfect contrast to the smooth, savory sauce. Seasoned with fresh nutmeg, parsley, and a bright hint of lemon juice, this dish offers a sophisticated yet comforting flavor profile. It is an ideal centerpiece for a spring dinner party or a special weekend meal, showcasing the seasonal bounty of wild mushrooms. Serve it over the cooked morels with crisp toast for a complete, restaurant-quality experience at home.

Ingredients

Directions

  1. Trim, wash, and squeeze dry 1 lb of morel mushrooms. Salt and pepper them lightly.
  2. Melt 3 tablespoons of butter in a saucepan over medium heat.
  3. Add the whole morels to the pan.
  4. Turn heat to high and cook for 2 minutes, stirring occasionally.
  5. Reduce heat to minimum, cover, and cook for 5 minutes.
  6. Remove the cooked morels to a hot platter and reserve the braising liquid in the pan.
  7. Chop some additional mushrooms (any kind) to yield 1/4 cup.
  8. In a separate medium saucepan, combine 3 tablespoons of butter and 3 tablespoons of flour. Cook over low heat, stirring constantly for 2 minutes until smooth but not browned.
  9. Whisk in 1/4 cup of the chicken broth, then gradually whisk in the remaining 3 cups of broth.
  10. Cook the mixture for 10 minutes, stirring frequently, until thickened.
  11. Turn off the heat under the sauce.
  12. In a bowl, beat 3 egg yolks together with 1/2 cup of heavy cream.
  13. Slowly stir the egg yolk and cream mixture into the hot sauce to temper the eggs.
  14. Return the saucepan to low heat. Bring the sauce slowly to a simmer, stirring constantly, and immediately remove from heat to prevent curdling.
  15. Add the chopped mushrooms and the reserved mushroom braising liquid to the sauce.
  16. Stir in additional butter one teaspoon at a time until the sauce is glossy and thick.
  17. Strain the sauce through a fine-mesh sieve into a serving bowl.
  18. Season with freshly ground black pepper, fresh ground nutmeg, 2 tablespoons chopped parsley, and 1 teaspoon lemon juice. Taste and add salt only if necessary.
  19. Pour the finished Poulette sauce over the reserved whole morels and serve immediately with toast.

Note

Do not boil the sauce vigorously after adding the egg yolks and cream, as this will cause the eggs to curdle and scramble. Gentle heat is key to a smooth texture.

Morels should be soaked in warm water for 15-20 minutes before cleaning to remove any sand trapped in their crevices. Rinse thoroughly and pat dry.

If the sauce becomes too thick upon standing, you can loosen it with a small amount of warm chicken broth or water.

This sauce is best served immediately. If you need to hold it, keep it warm in a double boiler and stir occasionally.

For a vegetarian version, substitute chicken broth with a rich vegetable or mushroom broth.
