Description

This traditional Chinese dish, often known as Mou Sou, features tender shredded pork and fluffy scrambled eggs stir-fried with a medley of fresh vegetables. The savory filling is brought together with a rich hoisin sauce, garlic, and aromatic spices, creating a flavorful and texturally diverse experience. Served wrapped in soft Chinese pancakes, it offers a comforting and satisfying meal that balances protein, vegetables, and carbs perfectly. Ideal for family dinners or casual gatherings, this recipe brings authentic home-style cooking to your table.

Directions

  1. Marinate the shredded pork with cornstarch, salt, pepper, 1 tablespoon of dry sherry, and enough beaten egg to moisten it. Let sit for 30 minutes.
  2. Heat a wok until hot and dry, then add oil.
  3. Once the oil begins to smoke, add the marinated pork and the 2 slightly beaten eggs. Stir continuously so the pork pieces separate and the eggs form curds.
  4. Drain the pork and egg mixture through a colander, reserving 2-3 tablespoons of the cooking oil.
  5. Return the reserved oil to the wok and lightly brown the chopped garlic.
  6. Add the shredded cabbage, scallions, bamboo shoots, mushrooms, tree ears, and tiger lily buds. Stir-fry for 3-4 minutes until just cooked.
  7. Return the pork and egg mixture to the wok with the vegetables.
  8. Add 2 teaspoons of hoisin sauce, soy sauce, 1 teaspoon of dry sherry, sugar, salt, pepper, and MSG if using. Combine well.
  9. Remove from heat.
  10. Spread each Chinese Pancake with hoisin sauce. Add a generous 2 tablespoons of the filling to the bottom half of each pancake and roll up like crepes. Serve immediately.
