Ingredients

Directions

  1. Preheat the oven to 400ðF (200ðC).
  2. Cut the tops off the cottage loaf rolls and set them aside to use as lids.
  3. Scoop out most of the soft crumb from the rolls, leaving the crusts intact to form hollow bowls.
  4. Crush the garlic clove with a pinch of salt, 1/2 teaspoon fresh chopped rosemary, and black pepper.
  5. Mash these seasonings into 2.5 ounces of softened butter.
  6. Spread the herb butter thickly over the insides and outsides of the hollowed rolls.
  7. Place the rolls and their lids on a baking tray and bake for 10 minutes until crisp and heated through.
  8. Meanwhile, slice the mushrooms thickly.
  9. Heat a large frying pan over medium-high heat and add the remaining 0.5 ounce of butter.
  10. Once the foam subsides, add the mushrooms and sauté, stirring frequently, for 4-5 minutes until reduced and browned.
  11. Pour in the double cream and let it bubble for a few seconds.
  12. Stir for another minute until the mushrooms are coated in the thickened sauce.
  13. Remove from heat and adjust seasoning with salt and pepper if needed.
  14. Pile the creamy mushroom mixture into the baked rolls, top with the lids, and serve immediately.
