  1. In a small bowl, whisk together sugar, flour, ginger, salt, water, mustard, soy sauce, vinegar, and garlic until smooth.
  2. Cut chicken breasts into bite-sized pieces and add them to the marinade, ensuring they are fully coated.
  3. Cover and refrigerate the chicken in the marinade for 15-30 minutes.
  4. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  5. Using a slotted spoon, remove the chicken from the marinade, placing it in the hot skillet; reserve the marinade.
  6. Stir-fry the chicken for 3-4 minutes, or until cooked through and lightly browned.
  7. Remove the cooked chicken from the skillet and set aside on a plate.
  8. Wipe out the skillet with a paper towel to remove excess residue.
  9. Heat the remaining 1 tablespoon of oil in the same skillet over medium heat.

  12. Pour the reserved marinade into the skillet with the vegetables.
  13. Bring the sauce to a boil, stirring constantly.
  14. Return the chicken to the skillet; cook, stirring, for 2 minutes or until the sauce is bubbly and thickened.
