This nostalgic Noodle Pudding is a tender, custard-like dessert that combines the comfort of baked noodles with the richness of cream cheese and vanilla. The dish features soft, cooked egg noodles folded into a smooth, sweet batter, resulting in a texture similar to a dense bread pudding or flourless chocolate cake, but dairy-forward and mild. Baked in a water bath ensures it stays moist and sets perfectly without cracking. It&# 226;€™s an excellent choice for family gatherings, holiday desserts, or a simple treat on a weekend afternoon. The optional cornflake topping adds a delightful crunch that contrasts with the soft interior, making every bite interesting. Serve at room temperature or slightly chilled for the best texture.

Ingredients

Directions

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. Butter an 8-inch square baking pan.
  3. Cook the medium egg noodles according to package directions until tender; drain well and set aside.
  4. In a large bowl, cream together the butter, sugar, cream cheese, and vanilla until smooth and well combined.
  5. Beat in the eggs one at a time, then stir in the milk until the mixture is uniform.
  6. Fold the cooked, drained noodles into the batter gently until evenly coated.
  7. Pour the noodle mixture into the prepared 8-inch square pan.
  8. Sprinkle cornflake crumbs evenly over the top if desired.
  9. Place the 8-inch square pan inside a larger 9-by-13-inch roasting pan.
  10. Carefully fill the larger roasting pan with hot water until it reaches halfway up the sides of the square pan (water bath method).
  11. Bake for 1 hour, or until a knife inserted into the center comes out clean and the top is golden brown.
  12. Remove the square pan from the water bath and let cool completely in the pan on a wire rack.
  13. Once cooled, cut into squares and serve at room temperature.
