Ingredients

Directions

  1. Bring a large pot of lightly salted water to a boil. Add the soba noodles and cook for 4 to 5 minutes until tender but still firm.
  2. Drain the noodles and immediately rinse under cold running water to stop the cooking process and remove excess starch.
  3. Drain the noodles well again and refrigerate until completely chilled.
  4. In a small saucepan, simmer the Cold Soba Dashi Broth over medium-high heat for 10 minutes to enhance the flavor.
  5. Remove the broth from heat and let it cool to room temperature, then refrigerate until very cold.
  6. In a non-stick skillet over medium heat, cook the lightly beaten eggs to form a thin omelet.
  7. Once set, remove the omelet from the pan and let it cool slightly, then slice it into very thin strips.
  8. Divide the chilled soba noodles among four serving bowls.
  9. Ladle the cold dashi broth over the noodles in each bowl.
  10. Top each bowl with flaked poached salmon or tuna, sliced egg omelet, shredded nori, sliced shiso leaves, and shredded spring onion whites.
  11. Add a teaspoon of wasabi paste and a tablespoon of konbu tsukudani to each bowl, adjusting to taste.
  12. Serve immediately while the broth is cold and the toppings are fresh.

Note

For best results, use high-quality soba noodles that are at least 30% buckwheat for authentic flavor and texture.

You can substitute fresh salmon flakes (shio zake) if available, but ensure they are drained and chilled properly to avoid diluting the broth.

If you don't have Cold Soba Dashi Broth, you can make a quick version by dissolving dashi powder in cold water and seasoning with soy sauce and mirin to taste.

Shiso leaves add a unique herbal note; if unavailable, you can substitute with fresh mint or cilantro, though the flavor profile will differ.

This dish is best served immediately after assembly to maintain the crispness of the noodles and freshness of the toppings.

Store any leftover components separately: noodles in the fridge for up to 2 days, broth for up to 3 days, and toppings as per their freshness guidelines.
