  1. Preheat oven to 400°F. Line 18 muffin cups with paper liners.
  2. In a shallow dish, combine 3/4 cup of the ground walnuts and 1/2 cup of the sugar; set aside for coating.
  3. In a large bowl, beat the remaining 1/2 cup walnuts, the remaining 1 cup sugar, and the softened butter until light and fluffy.
  4. Place the 2 large bananas in a blender or food processor and puree until smooth (about 1 cup). Beat the banana puree and egg into the sugar-butter mixture.
  5. In a medium bowl, combine flour, baking powder, cinnamon, nutmeg, and salt. Beat the dry ingredients into the banana mixture until just combined.
  6. Mash the small banana in a small bowl and stir in the raspberry jam to create the filling.
  7. For each muffin, roll 1 heaping tablespoon of dough in the walnut-sugar mixture to coat. Place in a lined muffin cup. Make a dimple in the center with the back of a spoon.
  8. Spoon 1 teaspoon of the banana-jam mixture into the center dimple.
  9. Roll 1 more heaping tablespoon of dough in the walnut-sugar mixture and drop it over the jam mixture to seal it inside.
  10. Bake for 15 to 20 minutes, or until a wooden pick inserted into the center comes out clean.
  11. Cool slightly on the pan, then transfer to a wire rack to cool completely. Serve warm or at room temperature.
