Description

This Nutty Fruit Conserve is a luxurious, homemade preserve that balances the tartness of dried apricots with the sweetness of golden raisins and fresh pears. The addition of slivered almonds provides a delightful crunch, while a hint of almond extract deepens the nutty flavor profile. Unlike standard jams, this conserve has a chunky, substantial texture, making it ideal for spreading on thick-sliced sourdough toast, serving alongside sharp cheeses, or using as a savory-sweet condiment for roasted meats. It captures the essence of autumn harvest flavors in every spoonful. Perfect for gifting or enjoying slowly over winter mornings, this recipe requires simple ingredients but results in a sophisticated, artisanal product that elevates any meal.

Ingredients

Directions

  1. In a large kettle, combine the coarsely chopped pears, butter, dried apricots, golden raisins, sugar, and almond extract.
  2. Cook and stir the mixture over medium heat until it begins to thicken, approximately 20 minutes.
  3. During the last 5 minutes of cooking, stir in the coarsely chopped slivered almonds.
  4. Quickly stir in the liquid fruit pectin.
  5. Bring the mixture to a full rolling boil and boil hard for 1 minute, stirring constantly.
  6. Remove from the heat and skim off any foam that forms on the surface.
  7. Ladle the hot conserve into hot, sterilized jars, leaving 1/4 inch headspace at the top.
  8. Remove air bubbles by inserting a non-metallic utensil into the jars.
  9. Wipe the rims of the jars and adjust the lids and bands securely.
  10. Process the jars in a boiling-water bath for 15 minutes.
  11. Remove jars from the bath and let them cool undisturbed for 24 hours.

Note

Storage: Once processed and sealed, store in a cool, dark place for up to 1 year. Once opened, refrigerate and consume within 3 weeks.

Safety: Ensure jars are properly sterilized before filling to prevent spoilage. Follow safe canning practices for water bath processing.

Ingredient Tips: Toasting the slivered almonds lightly before adding them to the mixture can enhance their nutty flavor.

Variations: You can substitute half of the sugar with honey for a different flavor profile, but ensure the acid level remains safe for canning.

Texture: For a smoother conserve, blend the fruit mixture slightly before cooking, though the chunky texture is traditional for this style.
