Description

These Old Fashioned Crumb Buns are a comforting classic, featuring a tender, slightly sweet dough enriched with butter, egg, and vanilla. The star of the show is the generous crumb topping, made with almond paste, brown sugar, and cinnamon, which bakes into a deliciously crunchy crust. Perfect for breakfast, brunch, or as a sweet treat with coffee, these buns offer a delightful contrast between the soft interior and the textured topping. They are easy to make with pantry staples and freeze well for later enjoyment, making them a reliable recipe for both everyday meals and special occasions.

Directions

  1. Heat milk in a small saucepan until lukewarm (about 105°F), then sprinkle yeast on the surface and whisk until dissolved. Set aside for 5-10 minutes until foamy.
  2. In a large bowl, beat together sugar, salt, and softened butter until soft and light.
  3. Beat in the whole egg and egg yolk until smooth, then scrape down the bowl and beat in vanilla, cinnamon, and nutmeg.
  4. Beat in half of the flour, then the yeast mixture, and finally the remaining flour, scraping the bowl between additions. Beat on low speed for about 2 minutes until the dough is elastic.
  5. Scrape the dough into a lightly buttered bowl, cover with plastic wrap, and let rise at room temperature until almost doubled in size, about 1 hour.
  6. While the dough rises, prepare the crumb topping by beating almond paste and egg white until smooth.
  7. Beat in brown sugar, granulated sugar, and softened butter until smooth and free of lumps.
  8. Beat in cinnamon and flour, scraping the bowl occasionally, then use your hands to rub the mixture into 1/4-to 1/2-inch crumbs. Cover and set aside.
  9. Preheat oven to 375°F (191°C) and place a rack in the middle level. Butter and line a 12 by 18-inch jelly roll pan with parchment paper.
  10. Turn the risen dough out onto a floured surface and press to deflate. Press or roll the dough into a 10 by 16-inch rectangle.
  11. Cut the dough into twenty 2 by 4-inch rectangles.
  12. Arrange the dough rectangles in the prepared pan, spacing them evenly (5 across the 12-inch side, 4 down the 18-inch side).
  13. Brush the tops of the buns with water and sprinkle with 3/4 of the crumb topping.
  14. Cover the pan with plastic wrap and let the buns rise until almost doubled in size, about 30-45 minutes.
  15. Sprinkle the remaining crumb topping over the risen buns.
  16. Bake for about 30 minutes, or until the buns are firm and the crumb topping is golden brown.
  17. Slide the buns from the pan onto a wire rack to cool. Once cooled, dust lightly with confectioners' sugar before serving.
