  1. Combine the yeast, 2 teaspoons of sugar, and 3/4 pint of warm water in a clean glass jar.
  2. Stir well to dissolve the sugar, then cover the jar loosely and let it sit in a warm place for 24 hours to create the starter "plant".
  3. For the next 6 days, feed the starter daily by adding 1 teaspoon of ground ginger and 1 teaspoon of sugar, stirring gently each time.
  4. After 7 days total, strain the starter through a fine sieve into a large bowl, discarding any solid residue.
  5. In a large pot, dissolve 1 1/2 pounds of sugar in 2 pints of water over low heat, stirring until completely dissolved.
  6. Remove from heat and allow the sugar syrup to cool to room temperature.
  7. Add the juice of 2 lemons and the strained starter liquid to the cooled sugar syrup.
  8. Dilute the mixture with 5 pints of cold water and stir thoroughly to combine.
