Ingredients

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Generously butter a 12-inch springform pan.
  3. Arrange 4 of the sliced peaches (sliced 1/4 inch thick) in a circular pattern in the bottom of the prepared pan.
  4. In a bowl, sift together 1 1/2 cups all-purpose flour and 1 1/2 teaspoons baking soda. Set aside.
  5. In a small bowl, combine 1/3 cup molasses and 3/4 cup boiling water. Stir until smooth and set aside.
  6. In a large mixing bowl, beat 2 eggs and 3/4 cup granulated sugar for 5 to 10 minutes until light and fluffy.
  7. Gradually add 1/3 cup melted unsalted butter to the egg mixture while beating continuously.
  8. Alternately add the flour mixture and the molasses mixture to the egg mixture, mixing just until smooth after each addition.
  9. Pour the batter evenly over the peaches in the springform pan.
  10. Bake on the center rack for 45 minutes, or until a toothpick inserted in the center comes out clean.
  11. Remove the cake from the oven and let it cool in the pan for a few minutes.
  12. While the cake bakes, sauté the remaining 8 peach slices (sliced 1/4 inch thick) in 1/4 cup melted unsalted butter and 6 tablespoons packed dark brown sugar.
  13. Cook the peaches for 6 to 8 minutes, until soft but not mushy. Remove from heat and let cool.
  14. Once the cake has cooled slightly, invert it onto a serving platter so the baked peaches are on top.
  15. Arrange the cooled sautéed peach slices around the top of the cake.
  16. Melt 1/2 cup peach or apricot preserves in the top of a double-boiler until smooth and brush generously over the sliced peaches.
