Description

These Onion-Fennel Flatbreads are a delightful addition to any Mediterranean-inspired meal. The dough is enriched with sweet, caramelized onions that melt into the bread, providing bursts of savory flavor in every bite. Toasted fennel seeds add a subtle anise-like aroma and a pleasant crunch, complementing the soft, chewy texture of the flatbread. Perfect for serving alongside soups, stews, or as a base for toppings like hummus or roasted vegetables, these breads are versatile and crowd-pleasing. They come together quickly with simple ingredients, making them an ideal choice for weeknight dinners or casual gatherings. Enjoy them warm from the oven for the best experience.

Ingredients

Directions

  1. Heat 1/4 cup olive oil in a skillet over medium-low heat and saut finely chopped onions until tender and translucent, about 10 minutes.
  2. Transfer the cooked onions to the bowl of an electric mixer fitted with a dough hook.
  3. Add 1 cup of warm water to the onions in the mixer bowl.
  4. Sprinkle yeast and sugar over the water and stir gently to dissolve, then add salt.
  5. Crush 2 teaspoons of fennel seeds using a mortar and pestle and add them to the onion mixture.
  6. Gradually mix in the flour until a soft, medium-consistency dough forms.
  7. Turn the dough out onto a floured surface and knead until smooth and elastic, about 4 minutes.
  8. Cover the dough and let it rest for 20 minutes.
  9. Grease a heavy baking sheet with oil.
  10. Divide the dough into 4 equal pieces and roll each piece into a ball.
  11. Flatten each dough ball to a thickness of about 3/4 inch and place them on the prepared baking sheet.
  12. Rub the top of each flatbread with the remaining olive oil.
  13. Sprinkle the remaining whole fennel seeds over the top, pressing them slightly into the dough so they stick.
  14. Cover the flatbreads and let them rise for 30 minutes.
  15. Preheat the oven to 425F (218C).
  16. Bake the flatbreads until golden brown, about 25 minutes.

Note

Storage: Allow the flatbreads to cool completely before storing. Wrap tightly in plastic wrap or place in an airtight container at room temperature for up to 2 days. For longer storage, freeze wrapped flatbreads for up to 1 month. Reheat in a toaster or oven before serving.

Substitutions: If you don't have an electric mixer, you can mix the dough by hand. It may require more kneading time to achieve the right texture. You can also substitute fennel seeds with cumin or caraway seeds for a different flavor profile.

Tip: Ensure the water is warm (about 105-110F) but not hot, as water that is too hot can kill the yeast.
