Description

This classic Jell-O salad is a nostalgic favorite that balances sweet and tart flavors in every bite. Layers of bright orange and lemon gelatin are studded with juicy crushed pineapple and fluffy miniature marshmallows. Topped with sliced bananas and a surprising sprinkle of shredded cheddar cheese, it offers a unique texture contrast. It&# 226;€™s a refreshing, colorful dish that’s easy to make ahead, making it an ideal centerpiece for church suppers, family barbecues, or as a sweet-savory side to holiday meals.

Ingredients

Directions

  1. In a large bowl, stir the orange gelatin powder into 1 cup of boiling water until completely dissolved. Add 1 cup of ice cubes and stir until the ice melts and the mixture begins to thicken.
  2. Fold in the crushed pineapple (drained or with juice, depending on preference) and the miniature marshmallows. Pour this mixture into a 9x13 inch baking dish or a large serving bowl. Refrigerate for at least 1 hour, or until firm.
  3. While the orange layer sets, prepare the lemon layer. Stir the lemon gelatin powder into the remaining 1 cup of boiling water until dissolved. Add the remaining 1 cup of ice cubes and stir until melted.
  4. Once the orange layer is firm, gently pour the lemon gelatin mixture over the top. Smooth the surface with a spatula if needed. Refrigerate for another 2 hours, or until completely set.
  5. Just before serving, arrange the sliced bananas on top of the set gelatin. Sprinkle evenly with the finely shredded cheddar cheese. Slice and serve cold.
