Oven-Braised Pheasant With Sauerkraut
Description
This hearty German-inspired dish transforms gamey pheasant into a tender, flavorful centerpiece. The legs and wings are slowly braised with rinsed sauerkraut, dry white wine, juniper berries, and crispy bacon, creating a rich, tangy sauce that penetrates the meat. While the legs braise, the breasts are roasted separately to ensure they remain juicy and not overcooked. The combination of acidic sauerkraut, savory bacon, and aromatic herbs like thyme and cloves provides a complex depth of flavor perfect for autumn or winter dinners. Serve this rustic meal with crusty bread to soak up the juices, making it an ideal choice for a cozy family gathering or a special occasion where you want to impress with traditional comfort food.Ingredients
Directions
-
Preheat the oven to 300ðF (150ðC).
-
Rinse the sauerkraut thoroughly and drain well.
-
In a large Dutch oven, sauté the diced bacon over medium heat until crisp, about 3 to 5 minutes.
-
Add the pheasant legs, backs, and wings to the Dutch oven and brown in batches on all sides, about 3 to 4 minutes.
-
Remove the browned pieces and set aside; refrigerate the breast pieces separately until needed.
-
Add the sauerkraut, dry white wine, juniper berries, thyme, cloves, and bay leaf to the Dutch oven with the bacon.
-
Cook over medium heat, stirring occasionally, until about half the liquid has evaporated, about 10 to 15 minutes.
-
Return the browned pheasant pieces (legs, backs, wings) to the Dutch oven.
-
Place the uncovered Dutch oven in the oven and bake for about 2 hours, stirring occasionally and adding defatted chicken stock or water as needed to prevent drying out.
-
Remove the Dutch oven from the oven when the legs are tender and the sauerkraut is slightly browned.
-
Discard the backs, wings, and bay leaf. Season the mixture with salt and freshly ground black pepper to taste. Cover and keep warm.
-
Raise the oven temperature to 425ðF (220ðC).
-
Season the pheasant breasts with salt and pepper and place them on a rack in a roasting pan.
-
Roast the breasts for 20 to 25 minutes, or until the juices run clear when pierced with a fork.
-
Remove the breasts from the oven, set aside to rest, and keep warm.
-
Reheat the braised legs and sauerkraut mixture briefly in the Dutch oven.
-
Slice the meat from the roasted breasts and lay it over the legs and sauerkraut mixture before serving.
