  1. Scrub live clams in several baths of cold water to ensure all sand is washed away; set aside.
  2. Drop raw prawns into boiling salted water and cook until they turn red; drain, peel, and set aside.
  3. Pour half of the olive oil into a frying pan and slowly brown the chicken pieces; set aside.
  4. In a large Dutch oven or paella pan, heat the remaining olive oil over low heat.
  5. Saute the chopped onions and mashed garlic paste until tender but not brown.
  6. Add the cooked prawns, clams, browned chicken, saffron, salt, and rice to the pan.
  7. Pour in the hot water and bring to a gentle simmer.
  8. Simmer gently, uncovered, for 35-45 minutes until the rice is cooked and has absorbed most of the liquid.
  9. If the pan becomes too dry before the rice is cooked, add a little more hot water, but do not stir.
  10. If moisture remains when the rice is done, place the pan in the oven to dry out.
  11. Arrange strips of pimiento on top and serve directly from the pan.

Optional Ingredients: You can add 1/2 lb of chorizo sausage (casings removed and meat crumbled) fried for about 15 minutes in a separate pan, or 3/4 lbs of pork shoulder cubed and well browned in a separate pan. Add these along with the chicken.
