Palak Tomatar (Spinach & Tomatoes)
Description
This Palak Tomatar is a comforting and nutritious Indian dish that combines the earthy sweetness of spinach with the bright acidity of fresh tomatoes. The vegetables are simmered until tender, then blended into a silky smooth puree before being finished with a rich butter base. Infused with warming turmeric, fresh ginger, and a hint of heat from green chilies, this curry offers a perfect balance of flavors. It is incredibly versatile, serving beautifully as a side dish with chapatis or as a light main course with basmati rice. The addition of fresh lemon juice at the end brightens the profile, cutting through the richness for a satisfying, home-style meal that comes together quickly.Ingredients

Note
Use fresh spinach if possible for the best color and flavor, but frozen spinach works well too; just ensure it is fully thawed and drained if it releases a lot of water.
For a spicier kick, increase the number of green chilies or add a pinch of red chili powder.
This dish pairs excellently with chapatis, naan, or steamed basmati rice. It can also be served as a side dish alongside chicken tikka or paneer.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove, adding a splash of water if the consistency becomes too thick.
