  8. Cover the saucepan and cook over moderately low heat, shaking the pan occasionally but not stirring, for 35 to 45 minutes until the sugar is completely dissolved.
  9. Remove the lid and simmer the papaya strips for 10 minutes, or until they begin to appear translucent.
  10. Let the mixture cool completely in the pan, then cover and chill overnight.
