Description

These Parker House rolls are a timeless side dish, celebrated for their incredibly soft crumb and rich, buttery flavor. Originating from the Parker House Hotel in Boston, these rolls feature a unique folded shape that creates a crisp bottom and a tender top. Made with simple ingredients like yeast, milk, sugar, and plenty of butter, they offer a comforting warmth that pairs perfectly with soups, stews, or as part of a holiday feast. The dough is easy to work with, and the result is a homemade bread that feels luxurious yet approachable. They are best enjoyed fresh from the oven, warm and slightly steamy, offering a delightful texture contrast between the golden crust and the pillowy interior.

Ingredients

Directions

  1. Combine yeast, half the sugar, and warm water in a large bowl. Let stand until bubbly, about 5 minutes.
  2. Add the cooled scalded milk, remaining sugar, 1 teaspoon salt, and 1/4 cup melted butter to the yeast mixture.
  3. Stir in 3/4 cup flour. Beat at medium speed for 3 minutes.
  4. Gradually add the remaining flour, 1/2 cup at a time, until a soft dough forms.
  5. Turn dough out onto a lightly floured surface and knead for 8 to 10 minutes until smooth and elastic.
  6. Place dough in a lightly buttered bowl, turning to coat. Cover and let rise in a warm place until doubled, about 1 hour.
  7. Punch down dough and turn out onto a floured board. Let rest for 5 minutes.
  8. Roll dough out to 1/2-inch thickness and cut into 3-inch rounds.
  9. Make a crease in the middle of each round with the back of a knife.
  10. Brush rolls lightly with remaining melted butter.
  11. Fold each round in half along the crease and gently press edges together.
  12. Place rolls 2 inches apart on ungreased baking sheets.
  13. Cover with flour-rubbed dish towels and let rise for 35 minutes.
  14. Preheat oven to 425&# 194;°F (218ðC).
  15. Bake until golden brown, 12 to 15 minutes.

Note

Ensure the milk is cooled to lukewarm before adding to the yeast mixture to avoid killing the yeast.

The dough should be soft but not sticky. Add flour sparingly if needed during kneading.

For a richer flavor, use whole milk and unsalted butter.

Rolls are best served fresh. To reheat, wrap in foil and warm in a 350ðF oven for 10 minutes.
