  1. Remove stems and seeds from the dried pasilla chili, rinse it, and cut it into 1/2-inch pieces.
  2. Drain the sliced pimientos and pat them dry with paper towels.
  3. In a frying pan, combine olive oil, cut chili, pimientos, and chopped garlic. Stir over medium heat for 2 minutes.
  4. Add the white wine and lemon juice to the pan. Stir over high heat until most of the liquid evaporates, about 1 minute.
  5. Add the chicken broth and boil, uncovered, until the liquid is reduced to 1/4 cup, about 2 minutes. Let the mixture cool completely.
  6. Transfer the cooled mixture to a blender or food processor. Add the mayonnaise and blend until smoothly pureed.
  7. Season with salt and pepper to taste.
