Ingredients

Directions

  1. Combine 2 cups of peaches, 2 cups of apricots, Shiro plums, lemon juice, and sugar in a large Dutch oven.
  2. Mash the fruit mixture slightly to break down the pieces while keeping some texture.
  3. Stir in the remaining 1 cup of peaches and 1 cup of apricots.
  4. Add the margarine to the pot and bring the mixture to a slow boil over medium-high heat, stirring occasionally.
  5. Boil vigorously, stirring frequently to prevent scorching, for about 20 minutes or until the setting point is reached.
  6. Ladle the hot preserve into sterile 250mL canning jars, leaving 1/2 inch of headspace at the top.
  7. Wipe the rims of the jars with a clean damp cloth and seal with lids and rings.
  8. Process the jars in a boiling water bath for 5 minutes to ensure a proper seal.
  9. Remove jars from the bath and let them cool completely on a wire rack before labeling and storing.

Note

Ensure all jars and lids are properly sterilized before use to prevent spoilage.

The margarine helps reduce foaming during the cooking process, resulting in a clearer preserve.

To test for the setting point, place a small amount of the mixture on a chilled plate; if it wrinkles when pushed, it is ready.

Store sealed jars in a cool, dark place for up to one year. Once opened, refrigerate and consume within 3-4 weeks.

Shiro plums are a unique variety known for their firm texture and tart flavor, which complements the sweetness of the peaches and apricots.
