Directions
-
In a large bowl, combine the softened low-fat vanilla ice cream, mashed peaches, amaretto, and vanilla extract. Stir until thoroughly mixed and smooth.
-
Transfer the ice cream mixture to a freezer-safe container, cover tightly, and freeze until firm, approximately 4 hours.
-
While the ice cream mixture freezes, place the thawed frozen raspberries, sugar, and Grand Marnier into a blender. Process until completely smooth.
-
Press the raspberry mixture through a fine-mesh sieve into a bowl to remove seeds, reserving the puree. Discard the seeds.
-
Cover the raspberry puree and refrigerate until cold.
-
Spoon 2 teaspoons of the chilled raspberry puree into the bottom of each of 8 parfait glasses or champagne flutes.
-
Top each glass with about 1 1/2 tablespoons of fresh raspberries and 1/4 cup of the frozen peach ice cream mixture.
-
Repeat the layers of raspberry puree, fresh raspberries, and ice cream mixture, ending with a final layer of 2 teaspoons of raspberry puree on top.
-
Garnish each parfait with a peach slice if desired and serve immediately.

Note
For best texture, let the frozen ice cream mixture sit at room temperature for 5-10 minutes before scooping to make it easier to layer.
If you prefer a non-alcoholic version, omit the Amaretto and Grand Marnier. You can substitute the Amaretto with a bit more vanilla extract and almond extract, and replace the Grand Marnier with fresh orange juice.
The raspberry puree can be made up to 2 days in advance and stored in the refrigerator.
Use ripe, sweet peaches for the best flavor. If peaches are not in season, you can use frozen peaches, thawed and mashed.
