Description

This Pear-Plum Spread is a delightful, homemade condiment that captures the essence of late summer orchards. The natural sweetness of ripe pears balances perfectly with the tartness of red plums, creating a complex flavor profile enhanced by aromatic cloves, cinnamon, and a hint of fresh ginger. The texture is smooth yet substantial, making it ideal for spreading on toast, blending into yogurt, or serving as a sophisticated accompaniment to cheese boards and desserts. Because it relies on the natural pectin in the fruit and a brief boil, it sets beautifully without artificial additives. This recipe is versatile enough for everyday breakfasts or special occasions, offering a wholesome, plant-based treat that highlights seasonal produce.

Ingredients

Directions

  1. Peel, core, and coarsely chop the pears.
  2. Place chopped pears in a large saucepan and sprinkle with ascorbic acid color keeper.
  3. Pit the plums and cut each plum into eight pieces.
  4. Stir the plum pieces into the saucepan with the pears.
  5. Place cloves and ginger (if using) in a piece of cheesecloth and tie securely to create a spice bag.
  6. Add the spice bag, cinnamon stick, and water to the saucepan.
  7. Cover the saucepan, bring to a boil, then reduce heat and simmer for 15 to 20 minutes until the fruit is tender.
  8. Remove and discard the spice bag and cinnamon stick.
  9. Transfer the fruit mixture to a blender or food processor and puree until smooth, or press through a fine-mesh sieve.
  10. Return the pureed mixture to the saucepan.
  11. Simmer uncovered for 15 to 20 minutes, stirring occasionally, until the mixture thickens enough to coat a metal spoon.
  12. Remove the saucepan from heat.
  13. Stir in the sweetener until fully dissolved.
  14. Ladle the hot spread into clean, hot jars, leaving 1/2 inch of headspace.
  15. Wipe the jar rims clean and seal with lids.
  16. Process the jars in a boiling water bath for 10 minutes for long-term storage.
