Description

This International dessert features Sauterne, Or other semi-dry white wine, Granulated sugar, Lemon zest, Inch by 1/2 inch. It delivers sweet, indulgent flavor, bright, zesty notes.   1. Pour sauterne into a soaked 3-quart clay pot or a Dutch oven.
  2. Add the sugar, lemon zest and bay leaf 2.
  3. Place vanilla bean on a work surface.
  4. With the tip of a small sharp knife, slit bean lengthwise.
  5. With the knife, scrape out the seeds; add them to the clay pot.
  6. Seeds may cling together.
  7. Peel pears, leaving stems intact.
  8. Using a melon baller, core pears by scooping out from the bottom.
  9. Stand pears in the clay pot.
  10. Cover pot and place it in a cold oven.
  11. Set oven to 425F (218ðC) and bake until the pears are soft when pierced with a knife, about 30 minutes.
  12. Place pears on 4 dessert plates.
  13. Pour cooking liquid into a small saucepan.
  14. Bring to a boil over high heat and boil until the liquid is slightly syrupy, about 5 to 8 minutes.
  15. Spoon over the pears and serve.
