Peppered Seafood Sausage
Description
This elegant Peppered Seafood Sausage is a sophisticated take on traditional sausage-making, combining delicate white fish, sweet shrimp, and tender scallops into a cohesive, flavorful log. Brightened with fresh cilantro, zesty lemon juice, and warm ground cumin, the mixture is bound lightly with egg whites for a tender texture. Poached gently in barely simmering water, the sausage retains its moisture and subtle seafood flavors, making it an exquisite appetizer or light main course. Perfect for holiday gatherings, dinner parties, or as a unique starter for a seafood-focused menu, this dish showcases the natural sweetness of the ocean with minimal interference from heavy spices. Serve chilled or at room temperature for the best experience.Ingredients
Directions
-
Cut the fish into long strips suitable for grinding; leave the shrimp and scallops whole.
-
Grind the seafood, cilantro, and any other solid ingredients through a coarse blade of a meat grinder.
-
In a large bowl, combine the ground seafood mixture with egg whites, lemon juice, cumin, salt, and pepper. Mix gently until just combined.
-
Rinse the hog casing thoroughly under cold running water, ensuring the water runs through the entire length to remove salt. Check for holes.
-
Slide the rinsed casing onto the sausage stuffing funnel attachment of your meat grinder.
-
Place the seafood mixture back into the grinder hopper.
-
Begin grinding the mixture into the casing. Tie a knot at the end of the casing before starting, leaving 3 inches of empty space for expansion.
-
Grind the mixture into the casing, aiming for a sausage about 1 inch in diameter. Do not overstuff.
-
If the sausage expands too much, gently squeeze it with your hands to maintain the 1-inch width as you work.
-
Continue stuffing until you have approximately 4 feet of sausage.
-
Remove the funnel and press out any remaining mixture with your finger.
-
Leave 3 inches of empty casing at the end and tie a tight knot to seal the sausage.
-
Shape the sausage to ensure it is even, then coil it into a spiral and set aside.
-
Bring 1 inch of water to a boil in a large heavy skillet with a lid, then reduce heat until the water barely quivers.
-
Prick the sausage lightly with a sharp knife tip at 3-inch intervals to release air pockets.
-
Place the coiled sausage into the barely simmering water. Cover the pan and cook for 10 minutes.
-
Turn off the heat and let the sausage rest in the water for 10 minutes before serving.
