  1. Preheat oven to 375F (190C).
  2. In a mixing bowl, cream together the softened margarine, egg white, milk, vanilla extract, and peppermint extract until smooth.
  3. In a separate bowl, whisk together the flour, granulated sugar, baking soda, and salt.
  4. Gradually mix the wet ingredients into the dry ingredients just until a dough forms.
  5. Divide the dough in half.
  6. Add the food coloring to one half of the dough and mix until evenly colored.
  7. Place each portion of dough between two sheets of waxed paper or plastic wrap.
  8. Roll each portion into a 12 x 11-inch rectangle.
  9. Remove the top sheet of waxed paper from the plain dough rectangle.
  10. Carefully invert the plain dough rectangle on top of the colored dough rectangle, aligning the edges.
  11. Peel off the remaining top sheet of waxed paper.
  12. Starting from one of the long sides, tightly roll the dough up jelly-roll style, removing the bottom sheet of paper as you roll.
  13. Cut the log in half crosswise, then wrap each half tightly in plastic wrap and refrigerate for at least 4 hours or up to 24 hours to firm up.
  14. Once chilled, slice the rolls into 1/8-inch thick slices.
  15. Place the slices 2 inches apart on ungreased cookie sheets.
  16. Bake for 8 to 10 minutes, or until the edges are lightly golden.
  17. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
