Ingredients

Directions

  1. Wash the pumpkin thoroughly, cut it into 1-inch chunks, and peel.
  2. In a large preserving kettle, combine sugar, vinegar, water, cinnamon sticks, and ginger chunks.
  3. Heat the mixture over high heat, stirring constantly until the sugar completely dissolves and the liquid comes to a boil.
  4. Stir in the pumpkin chunks and stir until the mixture returns to a boil.
  5. Reduce heat to a simmer and cook, stirring occasionally, until the pumpkin is just barely tender, about 30 minutes.
  6. Ladle the hot pumpkin and liquid into prepared hot jars, leaving 1/4 inch of headspace.
  7. Run a non-metal utensil down the inside of the jars to release any air bubbles.
  8. Add more hot liquid if necessary to maintain 1/4 inch headspace.
  9. Wipe the jar rims and threads clean with a damp cloth.
  10. Place lids on jars and screw on bands until fingertip tight.
  11. Process jars in a boiling water bath for 10 minutes.

Note

Ingredient Substitutions: You can substitute 2-3 cups of the sugar with honey for a deeper flavor profile. If fresh ginger is unavailable, you may use 1/4 cup chopped crystallized ginger.

Spice Preparation: For easier cleanup, tie the cinnamon sticks, ginger chunks, allspice, and cloves in a cheesecloth bag before adding to the kettle. Remove the bag before jarring.

Additional Ingredients: This recipe traditionally includes 1 tablespoon whole allspice, 1 1/2 teaspoons whole cloves, and 6 oz thawed frozen orange juice concentrate. Add these to the kettle along with the water and vinegar.

Canning Safety: Ensure you have basic boiling water bath canning equipment. Jars must be hot when filling. Process for 10 minutes to ensure a proper seal for long-term storage.

Yield: This recipe typically yields eight to nine 1-pint jars.
