Description

These Petite Boules are sophisticated, bite-sized confections that balance the creamy sweetness of white chocolate with the earthy depth of toasted hazelnuts. The filling is enriched with Frangelico liqueur, adding a subtle nutty aroma that complements the chocolate perfectly. Each truffle is rolled in ground hazelnuts and coated in a thin layer of semisweet chocolate for a beautiful contrast in color and flavor. The texture is luxuriously smooth inside with a satisfying crunch from the nuts. Ideal for holiday gifts, elegant dinner parties, or as a special treat for yourself, these truffles require patience but yield professional results. They store well, making them perfect for preparing ahead of special occasions.

Ingredients

Directions

  1. Heat whipping cream in a saucepan over medium heat until it reaches a boil.
  2. Remove cream from heat and immediately add the finely chopped white chocolate.
  3. Stir continuously with a wooden spoon until the chocolate is completely melted and the mixture is smooth.
  4. Allow the mixture to cool at room temperature for 15 minutes.
  5. Stir in the Frangelico liqueur until fully incorporated.
  6. Transfer the mixture to a shallow dish and refrigerate for 2 hours, or until firm.
  7. Once firm, scoop out teaspoonfuls of the mixture and roll them into small balls using your hands.
  8. Place the rolled balls on parchment paper and let them sit for 30 minutes to firm up further.
  9. Set up a double boiler by placing a heatproof bowl over a pot of simmering water.
  10. Melt the semisweet chocolate over the hot water until it is half melted.
  11. Remove the bowl from the heat and stir with a wooden spoon until the chocolate is completely smooth.
  12. Allow the melted semisweet chocolate to cool to 89 degrees Fahrenheit.
  13. Place the ground toasted hazelnuts in a flat dish for rolling.
  14. Dip each white chocolate center into the cooled semisweet chocolate, ensuring it is fully coated.
  15. Immediately roll the dipped truffles in the ground hazelnuts to coat evenly.
  16. Transfer the finished truffles to a baking sheet lined with parchment paper.
  17. Cover the candies with plastic wrap and let them dry at room temperature overnight.
  18. Store the finished truffles in an airtight container.

Note

Ensure the white chocolate is finely chopped to allow for even melting and a smooth ganache texture.

Use a candy thermometer to monitor the temperature of the semisweet chocolate coating; cooling to 89&# 194;°F ensures it is thick enough to coat without being too runny.

If you do not have Frangelico, you can substitute with another hazelnut liqueur or omit it for a plain white chocolate truffle.

For best results, toast the hazelnuts in the oven at 350ðF for 10-12 minutes until fragrant before grinding them.

These truffles can be stored in an airtight container in the refrigerator for up to 2 weeks. Bring to room temperature before serving for the best texture.
