Made with just three main ingredientsripe pineapple, sugar, and waterthis recipe delivers a clean, bright flavor that lets the natural sweetness of the fruit shine. The optional splash of vodka keeps the sorbet soft and scoopable, even after hours in the freezer. Its a wonderfully simple dessert that requires no ice cream maker, just a food processor and some patience. Serve it as a light finale to a summer dinner, paired with fresh berries, or enjoy it as a guilt-free snack on its own. The texture is smooth and icy, offering a refreshing contrast to richer dishes. Its vegan-friendly, naturally gluten-free, and incredibly easy to customize with lime juice or mint if youd like to experiment.

Directions

  1. In a medium saucepan, combine the sugar and water.

  3. Cover and simmer for 5 minutes.
  4. Uncover, remove from heat, and set aside to cool slightly.
  5. Peel the pineapple, remove the eyes, and cut the flesh into 1-inch chunks.
  6. Measure out approximately 2 cups of pineapple chunks.
  7. In a food processor fitted with a steel blade, puree the 2 cups of pineapple chunks until smooth, about 45 seconds.
  8. With the machine running, pour in half of the hot sugar syrup within 15 seconds.

  15. Cover with plastic wrap and freeze until half frozen, about 1-2 hours.
  16. Process each batch of partially frozen sorbet mixture in the food processor for 1 minute, stopping once to scrape down the sides.
  17. Return the mixture to the pans, cover, and freeze until 3/4 firm, about 1-2 hours.
  18. Process each batch again for 1 minute.
  19. Return to the freezer until 3/4 firm, then process another 2 minutes.
  20. Pack the sorbet into an airtight container and freeze until firm enough to scoop or spoon, 4 to 6 hours.
