Description

These Pistachio Marzipan Truffles are a sophisticated confection that balances the earthy richness of pistachios with the deep, velvety notes of bittersweet chocolate. The process involves creating a smooth chocolate ganache center, encasing it in a sweet and nutty homemade pistachio marzipan, and finally enrobing the truffle in a crisp layer of tempered chocolate. The result is a multi-textured treat with a crunchy exterior, a chewy marzipan middle, and a creamy ganache core. Perfect for holiday gifting, wedding favors, or an elegant dessert course, these truffles showcase technical pastry skills while delivering an unforgettable flavor experience.

Ingredients

Directions

  1. Bring heavy cream to a boil in a saucepan, then remove from heat.
  2. Pour hot cream over chopped bittersweet chocolate and whisk until smooth.
  3. Whisk in 1 tsp almond extract, 1 tbsp butter, and 1 tbsp light corn syrup.
  4. Cool the ganache mixture to 80&# 194;°F or until thickened enough to pipe.
  5. Place pistachios in a saucepan, cover with cold water, and bring to a boil.
  6. Drain pistachios immediately and place on a clean towel.
  7. Fold towel over pistachios and rub to loosen skins, then separate kernels from skins.
  8. Place warm blanched pistachios in a food processor and process into a paste, scraping down sides frequently.
  9. Pulse in almond paste, confectioners' sugar, and 2 tbsp light corn syrup until a soft marzipan dough forms.
  10. Knead the marzipan dough by hand until smooth.
  11. Divide marzipan into three pieces and roll each into a 12-inch long cylinder, then flatten to 2 inches wide.
  12. Lightly beat the cooled ganache and transfer to a piping bag fitted with a 1/2-inch plain tip.
  13. Pipe a line of ganache down the center of each marzipan strip.
  14. Fold the long sides of the marzipan up around the ganache and press together to enclose.
  15. Cut each roll into 3/4-inch lengths.
  16. Chill pieces if necessary, then roll into balls between your palms.
  17. Melt and temper semisweet or milk chocolate.
  18. Coat the truffles in tempered chocolate and roll in chopped blanched pistachios.
  19. Place on a paper-lined pan and chill until the coating sets.
