Description

This elegant Pistachio Torte is a delightful dessert that balances the earthy richness of pistachios with the bright acidity of lemon curd. The cake itself is incredibly light, thanks to a folded-in egg white meringue, creating a tender crumb that melts in your mouth. The addition of dry bread crumbs adds a subtle structural integrity and rustic texture, while the generous amount of unsalted pistachios provides a beautiful green hue and intense nutty flavor. Topped with a smooth layer of lemon curd and garnished with chopped nuts, this torte is perfect for afternoon tea, holiday gatherings, or as a sophisticated finish to a dinner party. It pairs wonderfully with espresso or a light red wine.

Ingredients

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Butter and flour a 9-inch springform pan.
  3. In a large bowl, cream the butter and 1 cup of the granulated sugar together until light and fluffy.
  4. Add the egg yolks one at a time, beating well after each addition until incorporated.
  5. Stir in the dry bread crumbs and all but a scant 1/4 cup of the chopped pistachios.
  6. Beat the mixture for 1 minute to combine thoroughly, then set aside.
  7. In a separate copper or stainless steel bowl, beat the egg whites until soft peaks form.
  8. Gradually add the remaining 1 tablespoon of sugar and continue to beat until soft, dry peaks form.
  9. Whisk one-third of the beaten egg whites into the pistachio mixture to lighten it.
  10. Gently fold in the remaining egg whites until no white streaks remain.
  11. Pour the batter into the prepared pan and smooth the top with a spatula.
  12. Bake for 30 to 35 minutes, or until a cake tester inserted in the center comes out clean.
  13. Cool in the pan on a wire rack for 1 hour.
  14. Remove the sides of the springform pan and allow the torte to cool completely.
  15. Spread 1 cup of lemon curd evenly on top of the cooled torte.
  16. Sprinkle the reserved 1/4 cup of chopped pistachios over the lemon curd garnish.

Note

Ensure the bowl and beaters for the egg whites are completely clean and grease-free to ensure proper volume.

If you do not have a springform pan, you can use a regular round cake pan, but ensure it is well-greased and floured, as this torte may stick more than a standard butter cake.

For best results, use unsalted pistachios so you can control the salt content. Toast them lightly before chopping to enhance their flavor.

The lemon curd can be homemade or store-bought. If making your own, ensure it is thick enough to spread without running.

Store any leftover torte in an airtight container in the refrigerator for up to 3 days. Serve at room temperature for the best flavor and texture.
