Ingredients

Directions

  1. Carefully remove any tiny bones from the flounder fillets using a tweezer or your fingers.
  2. Preheat the broiler and line a broiler tray with aluminum foil.
  3. In a heavy saucepan, combine diced pineapple, cucumber, tomatoes, onions, and pineapple juice.
  4. Simmer the vegetable mixture over medium-low heat for 5 minutes, stirring occasionally.
  5. Reduce heat, add minced garlic and ginger, and season with salt. Continue cooking for another 5 minutes.
  6. Remove 1/4 cup of the liquid from the saucepan and mix it with cornstarch until smooth.
  7. Stir the cornstarch mixture back into the saucepan and cook, stirring constantly, for 2 minutes until the sauce thickens slightly. Remove from heat and set aside.
  8. Brush flounder fillets with olive oil and drizzle with lime juice. Sprinkle with salt.
  9. Place fish on the prepared broiler tray, about 4 inches from the heat source.
  10. Broil for 4-5 minutes, or until the fish is opaque and flakes easily with a fork.
  11. Remove fish from the broiler and cut each fillet in half crosswise.
  12. Place one piece of fish in each of 8 shallow serving bowls.
  13. Heat the fruit sauce in a saucepan over medium heat for 1 minute.
  14. Stir in chopped cilantro and ladle the sauce evenly over the fish in each bowl.
  15. Serve immediately while hot.
