Description

This bright and jewel-toned Pomegranate Jelly captures the essence of fresh pomegranates in a smooth, spreadable treat. The natural tartness of the juice is balanced perfectly by sugar and a hint of lemon, creating a sophisticated flavor profile that is both refreshing and rich. Ideal for spreading on toast, serving alongside sharp cheeses, or adding a pop of color to holiday charcuterie boards. This homemade jelly offers a gourmet touch to simple snacks and makes a thoughtful, elegant gift. With its glossy texture and deep ruby hue, it is a delightful addition to any kitchen, showcasing the beauty of seasonal fruits preserved at their peak flavor.

Ingredients

Directions

  1. Prepare 3 pint-sized canning jars and lids by washing them in hot soapy water and keeping them hot until ready to use.
  2. In a large kettle or heavy-bottomed pot, whisk together the pomegranate juice, lemon juice, and powdered pectin until the pectin is fully dissolved.
  3. Place the pot over high heat and bring the mixture to a full rolling boil, stirring constantly to prevent scorching.
  4. Once boiling, quickly stir in all the sugar.
  5. Return the mixture to a full rolling boil that cannot be stirred down, then boil hard for exactly 1 minute, stirring constantly.
  6. Remove the pot from heat immediately.
  7. Let the jelly stand for a minute to allow foam to rise, then skim off the foam with a spoon.
  8. Ladle the hot jelly quickly into the hot jars, leaving 1/4-inch headspace.
  9. Wipe the jar rims with a clean, damp cloth to ensure a proper seal.
  10. Place lids on jars and screw on bands until fingertip-tight.
  11. Process jars in a boiling water bath for 10 minutes, or let cool on a towel away from drafts if not canning.

Note

Use 100% pure pomegranate juice for the best flavor and color. Avoid juices with added sugar or pulp if you want a clear jelly.

Do not substitute powdered pectin for liquid pectin without adjusting the recipe instructions, as the setting times and methods differ.

If you do not have a boiling water bath canner, you can process the jars in a large pot deep enough to cover the jars by 1-2 inches of water.

Store sealed jars in a cool, dark place for up to one year. Once opened, refrigerate and use within 3 weeks.

For a less sweet jelly, you can reduce the sugar slightly, but be aware that sugar plays a crucial role in the preservation and setting process.
