Pommes Souffles recipe image

Pommes Souffles are the epitome of French elegance, transforming humble Russet potatoes into delicate, cloud-like crisps. The secret lies in a precise two-stage frying process: first blanching at a lower temperature to cook the interior, then shocking in hotter oil to puff and crisp the exterior. The result is a stunning contrast of textures’shatteringly crisp outside with a soft, creamy center. These make for an impressive appetizer or a sophisticated side dish for steak or poultry. While they require careful attention to oil temperatures and safety, the visual drama and delicious flavor are well worth the effort. Serve immediately while hot and puffed for the best experience.

Description

Pommes Souffles are the epitome of French elegance, transforming humble Russet potatoes into delicate, cloud-like crisps. The secret lies in a precise two-stage frying process: first blanching at a lower temperature to cook the interior, then shocking in hotter oil to puff and crisp the exterior. The result is a stunning contrast of textures&# 226;ÂÂshatteringly crisp outside with a soft, creamy center. These make for an impressive appetizer or a sophisticated side dish for steak or poultry. Ingredients

Directions

  1. Peel the potatoes and trim them into even oval shapes, removing any eyes or blemishes.
  2. Using a mandoline or sharp knife, slice the potatoes lengthwise on the narrow side into long, narrow oval slices slightly less than 1/8-inch thick.
  3. Pat the potato slices completely dry with paper towels to remove excess starch and moisture.
  4. Fill two large saucepans halfway with vegetable oil.
  5. Heat the oil in the first pan to 350ðF (175ðC) using a deep-fry thermometer.
  6. Heat the oil in the second pan to 400ðF (200ðC).
  7. Carefully lower a small batch of potato slices into the 350ðF (177ðC) oil, ensuring they do not overlap.
  8. Remove the pan from the heat and gently shake to prevent sticking; cook until the oil temperature drops to 300ðF (150ðC).
  9. Using a skimmer or slotted spoon, quickly transfer the par-cooked potatoes directly into the 400ðF (204ðC) oil.
  10. Fry for 15-30 seconds, turning constantly, until the potatoes puff up and turn golden brown.
  11. Remove the puffed potatoes and drain on paper towels.
  12. Return both pans of oil to their respective temperatures and repeat with remaining potatoes.
  13. Sprinkle immediately with coarse salt and serve warm.
