Description

This homemade poppy seed pasta is a delightful Italian-inspired dish that brings a unique nutty flavor and speckled appearance to your table. The dough is enriched with eggs and olive oil, creating a tender yet durable noodle perfect for tossing with light sauces or simply butter and cheese. The addition of dried herbs and poppy seeds adds depth and texture, making it a standout centerpiece for weeknight dinners or special gatherings. Simple to prepare with pantry staples, this recipe yields fresh pasta that cooks in just minutes, offering a superior taste and texture compared to store-bought alternatives.

Ingredients

Directions

  1. In a large bowl, mix together the flour, poppy seeds, dried herb, and 1/2 teaspoon salt (if using all-purpose flour).
  2. Make a well in the center of the flour mixture. Crack the eggs into the well and add 1/4 cup water and the oil.
  3. Beat the eggs and water with a fork, gradually incorporating the flour from the sides until a shaggy dough forms.
  4. If the dough is too dry, add a few drops of water; if too sticky, sprinkle in a small amount of additional flour.
  5. Gather the dough into a ball and knead on a floured surface for about 5 minutes until smooth and elastic.
  6. Divide the dough into 4 equal parts. Cover the parts you are not working with to prevent drying.
  7. Roll one part at a time into a paper-thin rectangle on a generously floured surface. Alternatively, pass the dough through a pasta machine until 1/16-inch thick.
  8. Loosely fold the rectangle lengthwise into thirds to create ribbons, or cut into desired shapes.
  9. Bring 4 1/2 quarts of water to a rolling boil in a large pot. Stir in 1/4 teaspoon salt.
  10. Add the pasta to the boiling water. Cook for 3 to 5 minutes, or until almost tender but still al dente.
  11. Drain the pasta well and serve immediately with your favorite sauce.
